We have been experimenting with a gluten free diet for my daughter. I still want her to be able to enjoy a treat now and then, so I have found ways to make some fun snacks using gluten free products. Since my daughter does not have a gluten allergy, I use products that you might want to double check if you or your child did have a gluten allergy. All of the products I used were labelled gluten free, but if you have a severe gluten allergy you might want to check for yourself.
When I was at the store last week, I noticed that they sold pumpkin spice marshmallows. I love all things pumpkin, especially this time of year, so I didn't have to think twice before buying the bag of marshmallows. Did I mention they were even shaped like a pumpkin? How could I resist? When I got home, I noticed there was a recipe for Pumpkin Rice Krispie Treats. Since I had gluten free Rice Krispies on hand, I thought I would give the recipe a try. If you have no gluten sensitivities, just substitute regular Rice Krispies.

You will need:
- 1 bag of Pumpkin Spice Marshmallows
- 5 cups of Gluten Free or regular Rice Krispies
- 3 tablespoons of butter
- 1/4 cup of candy melts (color of your choice)
Melt the butter and add the marshmallows. Toss to coat the marshmallows with the butter.
Return to the microwave until the marshmallows are melted when stirred.
Pour the Rice Krispies into the bowl with the melted marshmallows. For the record, that is my husband's hairy arm, not mine.
Mix this together and when all of the Rice Krispies are coated, press into a greased pan. A good tip for this part is to coat a spatula with a little butter and use it to press down the mixture. It will help your treats to be nice and even on top. Let the pan cool.
Place the candy melts in the microwave until melted. We used orange candy melts for Halloween, but you can use whatever kind you want.
Drizzle the melted candy over the pan of Rice Krispies.
When the candy hardens (we popped ours in the refrigerator for a few minutes) you can slice it into bars or use a fun pumpkin cookie cutter to make them into a pumpkin shape.
The pumpkin marshmallows really add a nice spice to a normal Rice Krispie treat and make it a perfect snack for Fall.
