I am a huge fan of warehouse clubs. The problem is sometimes I go overboard. I usually get more fruit than we end up consuming and I am stuck trying to figure out what to do with the rest. We freeze some of it for smoothies and use the rest in other recipes. This past week I bought blueberries, forgetting I already had some at home that were well on their way to mushiness. Since my kids love blueberry muffins I thought we could try making them. These easy blueberry muffins are sure to become one of our family friendly recipes.
Ingredients:
- 2 cups of flour
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1/4 teaspoon of salt
- 1 tablespoon baking powder
- 1 extra large egg
- 1/2 stick of butter, melted and cooled
- 1 cup of milk
- 1 cup of fresh blueberries
Before you start, preheat the oven to 400 degrees. Pour the flour, baking powder and salt into a bowl and stir to combine.
In another bowl, beat the egg and add the sugar, brown sugar and milk. Mix. Stir in the cooled melted butter.
Add the wet ingredients to the dry ingredients and mix just enough to combine. Fold in 1 cup of blueberries.
Fill your muffin tin with cupcake liners and fill each 3/4 full with the batter.
Bake at 400 degrees for 20 minutes. These are wonderful served with some butter fresh out of the oven! We had some for breakfast and snack and froze the rest.

Baking powder or baking soda?? Ingredients call for Baking Powder but the instructions say Baking Soda. Crap, my oven is heated and now I don't know what to add.
ReplyDeleteBaking powder is shown in the photo.

Love your version! Can't wait to try it!
Deletenot a fan of frozen breads, how do you unfreeze them and warm them back up without being all smushy?
ReplyDeleteI usually take them out and pop them in the microwave for a few second and let them thaw the rest of the way. You can also just take them out of the freezer and leave them out on the counter until they are thawed. I freeze muffins all the time and never have an issue with them being smushy afterwards. Thanks for stopping by!
