My husband thinks I am a culinary genius after the delicious and easy dinner I served this weekend. I made a Southwestern Casserole, and while I did accept all of his compliments, I know what really bumped this dish up a notch was the Kraft Fresh Take Southwest Three Cheese breadcrumb mix. I found mine at Walmart in the shredded cheese refrigerated section. If you want to impress your loved ones or even just jazz up an ordinary dinner, read on to see how simple it can be.
You will need:
- Kraft Southwest Three Cheese Fresh Take breadcrumb mix
- 2 cups of brown rice
- 6 frozen chicken tenderloins
- 1/2 can of black beans
- 1/2 can of corn
- 1 1/2 cups of shredded cheese - can use cheddar or a cheddar and jack mix
- Tortilla strips salad toppers
- Ranch dressing (optional)
- 9x9 casserole dish
Preheat oven to 375 degrees. Cook your brown rice according to package directions. Cut your chicken breasts into nugget size pieces.
The Fresh Take Meal Kit could not be easier to prepare. It comes in a plastic bag that has two pouches separated by a seal.
When you pull open the center seal you can combine the cheese and breadcrumb mixture. Then simply drop in your chicken pieces and shake to coat.
Place on a greased tray and bake at 375 for 25-30 minutes until the internal temperature reaches 165 degrees.
While the chicken is baking, you can prepare the rest of your casserole. Spread the cooked brown rice on a greased 9x9 baking dish.
Next, spread 1/2 a can of black beans and 1/2 a can of corn on top of the rice.
Now it's time to add the chicken. Look how crispy the chicken is after being breaded in Kraft #FreshTake. You could just serve this and your guests would be happy!
Top the casserole with the breaded chicken pieces.
Next, sprinkle 1 1/2 cups of shredded cheese on top. You can add salt and pepper at this point. I found between the cheese and breadcrumbs from Kraft Fresh Take and the cheese I added on top, the dish didn't need any additional seasoning.
Lower oven temperature to 325 and bake for 25 minutes. When it comes out of the oven you can drizzle some ranch dressing on top if desired.
The Southwestern Casserole got rave reviews. Even my kids liked it. Well, after they picked out the beans and corn. They are pretty picky. My husband had no idea how I prepared the meal, but he kept asking what I did to the chicken. He could tell this was no ordinary breading. I just told him that I am a wizard in the kitchen and he believed me...until he found the Kraft Fresh Take box in the recycling bin.
