I am a lover of breakfast casseroles. I admit it. Every time I go to a meeting or potluck, I bring one of these easy meals and I hope that there will be others there that I can try. I love how you can start with a few basic ingredients and just swap items in and out to come up with a whole new dish. I was thinking about making a Hash Brown Casserole and knew that I had to do it when I heard that Smart and Final was celebrating Frozen Food Month with a great sale until March 26th. Everything gets a month these days, why not Frozen Food?
When you spend $40 on participating frozen food items at Smart & Final you get a coupon good for $10 off of a future purchase. There were so many items to choose from, that it was easy to find $40 worth. I was happy when I saw that Ore Ida Hash Browns were part of the deal, because I knew they would work perfectly in the casserole I was planning.
Of course, I didn't stop there. I stocked up on lots of frozen meals and goodies.
I just had to find room in my freezer for all the food!
Who doesn't love a deal? I can't wait to use my $10 coupon the next time I head to Smart and Final.
Once my items were safely stowed away in the freezer, I got to work on my casserole.
You will need:
- Package of hash browns
- 8 eggs
- 1 1/2 cups of 2% milk
- 12 oz of crumbled breakfast sausage
- 2 cups of shredded cheese (I used a cheddar/jack mix)
- Salt and pepper to taste
- 9 x 13 baking dish
Preheat the oven to 375 degrees.
Fry the hash browns according to package directions and lay them down on a greased 9 x 13 baking dish.
Cover the hash browns with half of the crumbled sausage and half of the shredded cheese.
Combine the 8 eggs and 2 1/2 cups of 2% milk and pour the entire mixture evenly over the sausage, cheese and hash browns.
Add the remainder of the crumbled sausage to the top of the eggs.
Cover with the remainder of the cheese. Add some salt and pepper. I found that the cheese and sausage provided the saltiness for this dish, so I just used a few sprinkles of salt.
At this point you can cover the casserole and refrigerate it overnight. You can cook it the next morning and have a yummy casserole with no morning prep time.
Bake it in a 375 degree oven for 40 minutes. Ours was cooked at the 37 minute mark, but oven cook times vary. When it is done, the top will be slightly browned and the inside will feel firm when you poke it with a fork.
Who wouldn't want to wake up to this?
This will make 8 nice sized servings. So, who's ready for breakfast?
