Coming from an Italian background, I would attend numerous Italian festivals and feasts with my family. One of the staples of such events was a sausage and pepper sandwich. Getting one of these sandwiches was always the highlight of my Dad's festival experience. Recently, I had the opportunity to shop at Lucky Supermarket for some Lindsay Peppers and I wanted to share my twist on a sausage and pepper sandwich.


I found the Lindsay Peppers in the pickle/olive aisle at Lucky Supermarket. They had lots of varieties, but since I have never tried Sweet Banana peppers, I was interested in trying them. One thing I love about shopping at Lucky is the fresh finds throughout the store. I always get inspired to try out new recipes as I wander the aisles. An added bonus is that they will open a new check out lane if there are three people in front of you. As a busy mom, I am all for that!

Ingredients - For each sandwich you will be making, you will need:
  • 1/2 cup combined of Lindsay Sliced Sweet Banana Peppers, sliced red peppers and sliced red onion
  • 2 tablespoons of pesto sauce
  • Large roll, sliced
  • 1/4 cup of shredded mozzarella cheese
  • 1 Italian sausage (we used a sweet turkey sausage)
  • Cooking spray

Spray a pan with cooking spray and cook peppers and onions over medium heat until the red peppers and onions soften and the mixture starts to brown.

While the pepper/onion mixture is cooking, start cooking your sausage. For the sausage to fit well on the roll, I cut it in half and spread it out in a pan. This also helped reduce the cooking time. Brown the sausage until no more pink remains and it is fully cooked. While this is cooking preheat a broiler.

Spread the pesto sauce on both sides of the sliced bun.

Top with the cooked sausage and pile on the Lindsey Peppers, red peppers and onions. Cover with 1/4 cup of shredded mozzarella cheese and toast in a broiler or oven 5-10 minutes until cheese melts and bread starts to brown.

This sandwich made a quick and delicious lunch. There were so many great flavor combinations working in this sausage and pepper sandwich. The sweet and mild flavor of the Lindsey Peppers which have been soaked in a vinegar brine, combined with the sausage and pesto work perfectly together. The toasted roll gives a nice crunch with each bite and the oozy, melted cheese make this sandwich a winner. This would be perfect to serve to friends while enjoying a game.
